One thing I really cherish is the trip to the farmer’s market. There’s something about the Summer bounty of fresh fruits and veggies that makes it such an exciting shopping experience. It’s safe to say that I can go a little overboard on the veggie shopping but how can you resist all these home grown, fresh beauties?
Most recently, there was a great selection of avocados that I couldn’t pass up. Especially when they get you with a bulk deal! Avocados have a wonderful creamy texture that serve as a great base or add in to any dish (and great health value!). Just add a little salt, pepper, cilantro and lime and you’re golden!
So, after feasting my way through a long holiday weekend, I was looking for a quick and easy breakfast dish that was protein packed but also light. Queue in the avocado! I’m sure all of us have seen those healthy breakfast takes with baking the egg inside the avocado but how many of us have actual tried it? Well it was super simple!
After doing a quick search to get an idea of temperature and time, I did my own take on this gem. I kept it simple, which honestly sometimes is the BEST way to go about a recipe, stop overthinking it! Cooking is not so scary, I promise! If you have 2 minutes to start that microwave you have 2 minutes to throw this together and in the oven while you go about getting ready!
All I did was half an avocado and remove the pit, crack an egg into each half, salt and pepper and throw it in the oven at 425F for 20 minutes! That’s it!!!! When it came out, I added some chopped cilantro and a squeeze of lime juice. In my opinion this really pulled the dish together. So simple but SOOO good!!
Just look at how yummy this looks! And you know what was the icing on this cake? Cut into that baked egg yolk and watch it run down the sides of the avocado, WINNER! And this was the perfect little breakfast to start my day after feasting the last few days!! Go ahead, give it a try. I promise that oven won’t bite! 😉
TOOLS & GADGETS
- Oven safe dish
- Cutting board
- 2 eggs
- 1 avocado
- 1 teaspoon freshly squeezed lime juice
- 1 tablespoon chopped cilantro
- Salt and pepper
Preheat the oven to 425 degrees F.
Preheat the oven. Cut the avocado in half and remove the pit.
Place avocado halves in oven safe dish. Crack the eggs one at a time into the avocado well where the pit used to be.
Salt and pepper to taste. Place dish in the oven for 18-20 minutes depending on your oven. You want the whites to be set but the yolk still jiggly so it comes out nice and runny.
Remove from oven once done. Top with fresh chopped cilantro and lime juice. Dig in!
