Cheesy Breakfast Skillet

What to make when you want something hearty for breakfast but don’t want to slave over the stove? A skillet dish! This is SO easy! You can make it on the stove top or throw it in the oven. My method here starts on the stove and finishes off in the oven for the perfect cooked egg and melted cheesy goodness!

I mean really, you have everything you need in this one pan! Crispy, golden potatoes, delicious meaty bacon, perfectly cooked eggs, and a cheesy, melty goodness that pulls all these flavors together. How else would you start your weekend morning?OLYMPUS DIGITAL CAMERA

The trick to really getting the crispiness in the potatoes is using a cast iron pan.
This guy is heavy duty but has some amazing kitchen uses. Since the entirety of the pan heats as a whole, it creates this even cooking in every crevice and a layer of crust on the bottom. Then you add the bacon, this adds a beautiful, hearty flavor and the fat helps to unstick some of those caramelized potatoes. Next, you’ll add in your onions and peppers which will get a nice golden color and marry with all the other flavors.


The big finish here is the eggs and cheese. How can you go wrong with cheese? You’ll make nice little pockets to drop in your eggs and surround them in a bed of cheese covering all your other pan goodies. Once this comes out of the oven, it will be a cheesy meal with the perfect ooey egg yolks.

This is the perfect dish just for you and that special someone or if you’re having a few friends over.

Why not indulge in a hearty breakfast or brunch? Mix up some mimosas, maybe some fresh fruit salad and you’ve got a fabulous meal for two, three or four!


Who needs a diner when you’ve got the easiest dish you could throw together right here! Give it a try and you won’t be disappointed!


  • Mixing bowls
  • Cutting board
  • Knife for chopping and dicing
  • Spatula
  • Cast iron skillet (oven safe skillet is okay to use as well)
  • Wooden spoon


  • 4 medium potatoes cleaned, peeled and diced in small cubes
  • 1/2 an onion, finely diced
  • 6 small sweet peppers, finely diced
  • 1/2 cup shredded mozzarella cheese
  • 7 oz of bacon, diced
  • 2 tablespoons olive oil
  • 1/4 cup water
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon paprika
  • 1/4 teaspoon sage
  • 1/4 teaspoon thyme
  • Salt and pepper to taste



Clean, dice and chop all your ingredients so you’re all ready to go. I like to place them in small mixing bowls during my prep.


On the stovetop, heat the oil in the cast iron skillet on medium high heat. Add the diced potatoes and cook until golden and crispy. Stir occasionally to help prevent sticking. Add in the chili powder, paprika, sage, thyme, salt and pepper. After about 10 minutes, add the water to help cook potatoes through about another 10 minutes.


Add in the bacon and cook another 10 minutes until crispy. Again, stirring every 5 minutes or so.


Add in the onions and peppers and cook until soft. About 5 minutes.


In your pan, make 4 wells for the eggs. Do this by pushing the potato mixture to the sides. Crack each egg individually and add one to each well. Next, sprinkle the cheese around each egg well covering the potato mixture.


Place the skillet in the oven for about 6-8 minutes until the cheese is melted and the egg whites are cooked through.


Remove from oven and top with a bit more of the seasonings to taste. OLYMPUS DIGITAL CAMERA
